Easy Cheesy Mini Potatoes Recipe

Cheesy dishes and mini potatoes are a go-to of mine as a side dish. I have been trying to eat better, but there are times I like to indulge in dishes like this, especially in the fall. Cheese has an ooey gooey goodness that can bring the flavour and the fun to so many dishes. And you know what goes great with cheese? Potatoes!

How did I come up with this recipe? I had friends coming over and I was all out of ideas of a simple side dish to serve. I had mini potatoes and thought it needed more to enhance their flavour. What better way to snazz up a side like mini potatoes than with cheese?

Garlic and rosemary. These two ingredients are favourites in my kitchen to use to add zing to meals. This duo also creates the most beautiful aromatics. I knew I had to add them to this dish.

Another great addition to this recipe is a salty protein many people love: Bacon! Chopped up and sprinkled on top of the potatoes, bacon gives this recipe a hint of crunch.

The final touch to this super dish is cheese! I used Mozzarella cheese for this recipe, but a sharper cheese, like an old cheddar, would work as well. It also adds a bit of moisture to the rest of the ingredients.

Easy Cheesy Mini Potatoes
Instructions
  1. Preheat oven to 375°F.
  2. Wash and half potatoes and place potatoes into a pot.
  3. Fill the pot with water. Set pot on high temperature and boil potatoes for about 10 minutes.
  4. While potatoes are boiling, chop garlic, rosemary, and bacon, and shred cheese.
  5. Cover a cookie sheet with parchment paper or foil.
  6. Place boiled potatoes on cookie sheet and coat oil over them.
  7. Season potatoes with salt and pepper.
  8. Sprinkle chopped ingredients evenly over potatoes.
  9. Place potatoes into the oven for 15-20 minutes. Sprinkle shredded cheese over potatoes and place back into the oven until cheese has melted.
  10. Serve potatoes alongside your favourite protein and veggies to complete a delicious meal!
