Easy Cheesy Mini Potatoes
A simple and easy side dish to complete a meal the tastes great with most proteins!
or about 40 mini loose mini potatoes
I used Mozzarella, but any brick cheese will work.

Preheat oven to 375°F.
Wash and half potatoes and place potatoes into a pot.
Fill the pot with water. Set pot on high temperature and boil potatoes for about 10 minutes.
While potatoes are boiling, chop garlic, rosemary, and bacon, and shred cheese.
Cover a cookie sheet with parchment paper or foil.
Place boiled potatoes on cookie sheet and coat oil over them.
Season potatoes with salt and pepper.
Sprinkle chopped ingredients evenly over potatoes.
Place potatoes into the oven for 15-20 minutes. Sprinkle shredded cheese over potatoes and place back into the oven until cheese has melted.
Serve potatoes alongside your favourite protein and veggies to complete a delicious meal!
