Simple and Savoury Shepherd’s Pie

Shepherd’s Pie. It is one of my all-time favourite dishes to eat!

I also love eating out at pubs. To me, if a pub is worth its salt, the Shepherd’s Pie on their menu looks and tastes good. If it is, I make that pub a favourite to visit.

Though my other half is a wonder in the kitchen, I can hold my own where making yummy dishes are concerned. At home, I have sole licence to whip up is Shepherd’s Pie. I had to share this dish because it is one of my favourites to make for my family, friends, or for myself when I was single! It is so simple to cook and savoury to eat.

Besides tasting awesome, this dish tastes amazing the next day. It heats up well and is as yummy the next day as it was the night before.

My family is always excited to eat a plate or bowl of this fabulous dish, and it is sad when it the casserole dish is empty. This is why I have to double my recipe when I make it so there is enough to eat a second day.

There are so many different Shepherd’s Pie recipes out there. Some versions like using Worcestershire sauce. For me, the flavour of this sauce puts me off just a bit.

I also do not like to have too many vegetables in a Shepherd’s Pie. My kids love having only corn, and they don’t even notice the onions since they are chopped.

  1. Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
  2. While the potatoes are boiling, melt 4 tablespoons butter (1/2 a stick) in large pan over medium heat.
  3. Sauté onions in butter until tender over medium heat for about 8 minutes.
  4. Add the corn to the onion about 6 minutes into the cooking time of the onions.
  5. Add ground beef and cook until no longer pink. Add salt and pepper.
  6. Add the beef broth and cook, uncovered, over low heat for 10 minutes, if you find the beef is dying out, add more beef broth as necessary to keep moist.
  7. Mash potatoes in bowl with remainder of butter, season to taste.
  8. Place beef mixture in baking dish. Use a spatula to flatten it out to level the mixture in the dish.
  9. Spread the mashed potatoes on top.
  10. Put into the oven at 400ºF and cook until bubbling and brown (about 30 minutes). Broil for last few minutes if you want a browned top.
Recipe Notes

If you are using ramekins, leave them under the broiler for about 10 minutes instead of 30 minutes.

Though my family can eat this dish all year-round, our favourite time of year to tuck in and enjoy our Shepherd’s Pie High is during the winter. It gets us warmed up after a chilly day. I especially love making smaller portions in ramekins, so I have my own individual portion straight out of the oven.

I make sheperds pie from leftovers in my refrigerator. Great way to make a hearty warm dish and clean out the refrigerator.

I have never made a shepherd’s pie. I didn’t grow up eating it so I’ve never thought to make it. I’m going to change that and use your recipe to make one. Looks so delicious.
