Whether it is after a daily workout, slaving away at work, or just for a moment to yourself, a fun snack is always welcome. After a lot of subtle hints and suggestions, My Other Half got me to try Greek yogurt, and now I enjoy it once a day as my treat. I then started to dabble into the crunchy world of granola and found one that I could eat with my treat to add to the yogurt’s flavour profile.
This gave me the idea to try putting together a healthier snack that looks good and combines my love of yogurt, granola and fresh fruit to get me to steer away from junk food. I came up with this easy three-ingredient Strawberry Dried Cranberry Granola Parfait snack I can have any time of the day to reward myself for working so hard.

And there you have it! This recipe yields two servings, so you can easily whip one up for a friend or someone special. You can also make this yummy treat for two for Valentine’s Day or a sweet dessert. If I do not eat this treat during the day, I will enjoy it as part of my evening Down Time ritual of the day to do something special for myself. I feel relaxed after eating it and my tummy is fueled to complete my day or to cease my munchie cravings as a midnight snack.
Need a single serving? I also love that it is easy to decrease this recipe with ease (about 3 strawberries instead of 7) to snack on solo. You can even swap out the strawberries for any fresh fruit you wish to make another type of Parfait treat.
