Warm and Cozy Beef Stew

Stew. It may not be the most elegant dish to serve, but it is one I can’t resist eating. How can I say no to a bowl full of beefy and veggie goodness? Beef stew is a meal my mom rarely made, but when she did, I was sure to go back for seconds (and thirds).

Now that I have my own VPs, I could not wait to try out this meal with them. I thought it was going to be difficult to make, but this is actually one of the easiest meals to make. The most difficult part is braising the beef, and that takes only a few minutes to accomplish.

Once I attempted this dish and placed it in front of my family to try for the first time, I was gifted with smiles (whew!). They liked it! That was a relief. Knowing I had another winner to add to my roster of meals to dish up to my family made me feel good.

Warm and Cozy Beef Stew
Instructions
  1. Place oil in a large pot on medium heat. Once the oil is heated, place stewing beef in the pot to braise. Use salt and pepper to season.
  2. Once the beef is braised, coat it in flour and remove from the pot. Keep the scrapings at the bottom of the pot to help with the flavour of the stew.
  3. Add onions and garlic to the pot on medium heat, stirring often until onions are translucent.
  4. Add beef broth, water, beef, veggies, and soy sauce to the pot. Stir, and let it come to a boil. Once this happens, add 4 tbsp of flour to thicken the broth. Turn the temperature down to minimum to simmer for two hours. Add additional salt and pepper to stew to taste. Stir occasionally.
  5. Once potatoes and veggies are soft, turn off stove and serve.

What I like best about beef stew is that it can be made on the stove, in a slow cooker, or in a pressure cooker. This gives you the option to prep and cook this dish whether you are in a hurry or if you want to take your time and let the flavours blend into each other.

Though winter is my favourite time of the year to chow down on this recipe, I would not turn down a request from my VPs or my other half to put this dish together any time of the year. I also like that I can get my VPs to eat a blend of veggies at the same time.

I also enjoy dining on this warm and cozy beef stew  recipe over a bed of rice. We go for basmati rice because of its flavour and aroma. It looks gorgeous, and the taste brings me back to my childhood.

    Beef stew is always a winner and such a classic dish to prepare. We like ours somewhat thick and full of great flavor. Have to have some crusty homemade bread to go along.

    I made beef stew over the weekend. It is a meal that the whole family can agree on and I can easily make it a Whole30 meal if we are following a specific meal plan.

    Beef Stew is one of my favorite, hearty type of meals to make when I need a warm and cozy meals. Definitely going to try your recipe! It’s slightly different from the one I make (and I’m not much of a cook.. so I need all the help I can get!)
