Stew. It may not be the most elegant dish to serve, but it is one I can’t resist eating. How can I say no to a bowl full of beefy and veggie goodness? Beef stew is a meal my mom rarely made, but when she did, I was sure to go back for seconds (and thirds).
Now that I have my own VPs, I could not wait to try out this meal with them. I thought it was going to be difficult to make, but this is actually one of the easiest meals to make. The most difficult part is braising the beef, and that takes only a few minutes to accomplish.
Once I attempted this dish and placed it in front of my family to try for the first time, I was gifted with smiles (whew!). They liked it! That was a relief. Knowing I had another winner to add to my roster of meals to dish up to my family made me feel good.

Warm and Cozy Beef Stew
What I like best about beef stew is that it can be made on the stove, in a slow cooker, or in a pressure cooker. This gives you the option to prep and cook this dish whether you are in a hurry or if you want to take your time and let the flavours blend into each other.
Though winter is my favourite time of the year to chow down on this recipe, I would not turn down a request from my VPs or my other half to put this dish together any time of the year. I also like that I can get my VPs to eat a blend of veggies at the same time.
